(Critical) The reach in cooler under the back counter was found to be holding assorted potentially hazardous dairy foods at 45 - 48 degrees f. Potentially hazardous foods must be maintained at 41 degrees f or below. Unit will require adjustment or repair. Corrected by discarding all ph foods.

(Critical) Improper cleaning frequency of the steamed milk stainless steel container was described. The steam milk is provided to customer and then container is rinsed out in handsink and not wash rinse and sanitized until the end of the day. Steamed milk container is not refrigerated. Based on procedure of non refrigeration, the steamed milk container must be wash rinsed and sanitized at least once every four hours. Change the procedure immediately and retrain all employees at all three stores. Corrected by discussion and new sop for cleaning of the steamed milk container will be provided for the file at time of the follow up inspection

The reach in cooler under the back counter had an ambient air temperature of 46 degrees f. Ph foods were found at 45 - 48 degrees f. This unit is ordered out of service for the storage of ph foods until repaired and or adjusted. All ph foods are required to be maintained at 41 degrees f or below.

The thermometer in the upright arctic air freezer is broken and the thermometer for the pop cooler is missing. Provide thermometers for these units in order to be able to monitor the temperatures for these units.

Test strips for quaternary ammonium are missing from the facility. Provide test strips in order to properly monitor concentration of sanitizer.

The interior of the upright freezer is in need of cleaning. Sherbert/ice cream has spilled on bottom interior of the unit. Clean now and place on a more frequent cleaning schedule

At time of inspection there is not a certified food safety manager for this location. The manager is scheduled to sit for the feb. 17, 2011 servsafe class with charles yet. Please fax confirmation of class schedule within 7 days to perri boman at 734 222-3881. All facilities are required to have a certied food safety manager

Thd display cooler is not capable of holding ph foods at 41 degrees f or below. At the time of inspection there weren't any ph foods in the unit and one side was completely shut down. The other side had muffins and sponge cake not requiring 41 degreees f or below. Correct by repairing unit asap by 8/28/10. Contiue to store only non ph foods in this unit.

The interior of the upright freezer needs cleaning. Clean now and place on a more frequent cleaning schedule. The gasket on the door of the prep unit needs cleaning. Clean now and place on a mre frequent cleaning schedule.
