(Critical) Observed employees not sanitizing blenders after washing and rinsing. All food utensils and equipment must be properly sanitized after cleaning. Corrected by educating employees about proper sanitizing methods, proper 3 compt sink setup and how to determine correct sanitizer concentration. Critical corrected

Observed frozen milk being thawed submerged in 60 degree f. Standing water in the sanitize compartment of the three compartment sink. Milk has been thawing approximately 30 minutes. Pic corrected by running 60 degree f. Water over milk container.

Observed chlorine test strips in use. Even though quaternary ammonia sanitizer is used for washing dishes. Correct by obtaining the proper test strips

Observed the mop drying in the mop wringer of the mop bucket. Mop should be dried hanging on the mop rack

Observed chlorine test strips in use. Even though, quaternary ammonia sanitizer is used for washing dishes. However, the proper sanitizer level was measured in the sanitizer basin of the three compartment sink. The operator utilizes the same method of mixing the sanitizer solution every time dishes are washed. Correct by obtaining the proper test strips

Observed the mop drying in the mop wringer of the mop bucket. Mop should be dried hanging on the mop rack
