The food items closest to the door maintaining at higher temperatures possibly due to the wic door not closing properly. Refigeration repair person on site at end of inspection; condensor needed cleaning; temperature dropping; will check again at follow-up inspection. ,

Corrected at time of inspection by reheating in-house marinara sauce found at 115°F in hot holding unit; the other soup in same hot holding unit found at 158°F. The sauce was reheated on the stove top to >165°F then placed back into hot holding unit to maintain at a minimum 135°F

(Critical) Time as a public health control not being implemented properly for pizza by the slice. The time was not marked on the sliced pizza display board for the various pizza types on display. Corrected at time of inspection by recording the times on the pizza by the slice display board for the corresponding pizza types. The employee was certain of the times for those pizza slices on dipslay; all pizza baked and placed on display at 11:30 am each morning. Some of the pizzas were baked a second time early this afternoon. All within the 4 hour discard time if using the 11:30 am out of oven time.

(Critical) One of the metal stem food thermometers not calibrated properly and the thermistor style thermometer not operating. Corrected at time of inspection by calibrating the metal stem food thermometer using the ice bath method. Owner had an addtional working themistor style food thermometer in the office. He will purchase some replacement batteries
