(Critical) Found employees working in kitchen cooking/prep area using their own common towels to dry hands after washing. Pic corrected by filling paper towel dispenser, and instructed employees to discontinue using cloth towels to dry hands, and to use paper towels to dry hands after washing.

Found the pop nozzles of the pop machine in the dining room wait station sticky. Pic corrected by scrubbing, cleaning, rinsing, and sanitizing pop nozzles.

Found numerous shelves and counter tops lined with towels with utensils such as cups stored on top of towels. To correct remove absorbent type linings and replace with nonabsorbent lining.

Found the interior and interior door panels of the 3 door prep top cooler soiled. Found the gutter edges of the cooking hood soiled with grease. To correct clean as soon as possible, and clean on a more frequent schedule.

Found the door gaskets of the 3 door prep top cooler cracked and torn. To correct repair/replace door gaskets.

Found current food license not posted. To correct post food license in a conspicuous place for public inspection.

Found the basement storage area floor soiled with accumulation. To correct clean as soon as possible, and clean on a more frequent schedule.

Found facility using household equipment (foreman grill) on the cooking line. Found a single use disposable tin foil pan with cardboard as dividers taped down with duct tape, used a utensil storage bin. To correct replace unsuitable equipment/utensil for commercial applications with commercial grade equipment.

Found no paper towels in the paper towel dispenser in the cooking/prep handsink area. Pic corrected by filling paper towel dispenser, and was reminded to keep paper towel dispenser filled at all times.

(Critical) Found time/temperature control for safety food (tcs), a container of wrapped grape leaves 48°F in the bottom portion of the 3 door prep top cooler. Pic temporarily corrected by discarding wrapped grape leaves, and states he will not overload bottom portion of cooler. Found tcs, a cut watermelon 43°F, chicken 44°F, and cooked beans 44f, in the walk in cooler. Pic temporarily corrected by adjusting walk in cooler to a colder setting. I will return to verify if wic is holding tcs at 41°F or lower. Found tcs, rice 50°F, sliced eggs 50°F, tabouleb 50f, etc. . . , in the salad buffet bar. On follow up inspection found tcs, a container of wrapped grape leaves at 41°F in the middle shelf of the 3 door prep top cooler. Violation corrected. On follow up inspection found tcs, hummus 41°F, sliced tomatoes 41°F, and milk 41°F in the walk in cooler. Violation corrected. On follow up inspection found salad buffet bar empty. Pic states salad bar is available until 2:00 pm, and has provided a time control policy for salad buffet. Violation corrected at this time. Continue to monitor temperatures and procedures.

Found no handwashing sign in the wait station handsink area. To correct provide sign reminding employees to wash their hands

Found the drain line of the steam table broken. To correct repair/replace drain line.

Found the edges on the top portion of the 1 door prep top cooler soiled. Found the interior of the microwave in the cooking prep area soiled with accumulation. Found grease accumulating on the filters and edges of the cooking hood. To correct clean as soon as possible, and clean on a more frequent schedule

Found a container of bread partially under the sneeze guard of the buffet cold table. To correct re-locate bread so it is completely under sneeze guard.

Found the bottom corner of the 3 door prep top cooler, the walk in cooler, and the salad buffet cooler not holding tcs at 41°F. To correct repair/replace coolers to hold at 41°F or lower.

Found metal shaker, plastic squeeze bottles, and storage container of seasoning without labels through out kitchen prep areas. To correct provide labels on all food containers/dispensers.

Found cotton towels used to line counter tops where inverted cups are stored. To correct replace cotton towels with non-absorbing mats or surfaces that are not absorbent.

Found a household juicer and other similiar grade equipment on the back prep area table. To correct replace all household equipment with commercial grade equipment.

Observed employees working in cooking and dishwashing areas not wearing hat or hair restraint. Pic corrected by having employees wear hair nets

Found a convection oven on the floor in the back dining area. Found unnecessary items in the employee restroom/storage area. Found some litter and various construction items in the back door area. Pic states these are not his items, and that someone left these items. To correct remove/relocate all items to appropriate places.
