(Critical) Numerous utensils, pans, pots, and can openers found soiled/with accumulation of debris. Pic states that they rewash all utensils and pans before use. Food contact surfaces need to be kept clean to sight and touch to prevent bacterial growth. Clean now and make sure that dishes are clean after washing in dishwasher or 3-compartment sink. Storing the pots and pans inverted will also help with preventing accumulation of debris.

Found several containers of flour and sugar without labels. White powders should be labeled in order to properly identify these. Please label these for identification purposes

Upright reach in cooler does not have a thermometer inside to measure ambient air temperature. Please provide a thermometer inside reach in cooler

Light bulb in storage closet not shielded or plastic-coated. Please provide light sheild or a plastic-coated bulb in order to prevent any possible glass fragments from contaminating food contact surfaces

(Critical) The dishmachine was not dispensing any sanitizer at time of inspection. Proper concentration of chlorine for proper sanitization is 50 ppm. Call for repair of unit and manually sanitize until the dishmachine is operating properly and dispensing proper sanitzier concentration

Sanitizer did not move through the line at all during dishmachine evaluation. Call for repair of unit. (Critical) Carton of raw shell eggs found on the shelf in the 3 door cooler opposite the caterer's freezer above juice and other ready to eat foods and next to ready to eat foods. Store raw eggs so that they are not above or in close proximity to foods that are ready to eat to avoid potential for cross contamination of those rte foods. Corrected by relocating the raw shell eggs to the bottom shelf on the other side of the cooler

The slots are not easily cleanable and the utensil food contact surface blade of the knives are required to be stored in a cleanable location after the knives are cleaned. Observed the kitchen three compartment sink drain of the rinse compartment with a leak at the handle to sink valve. To correct schedule repairs to prevent future leaking onto the floor of the kitchen
